Brownies made better — fudgy, rich, and with the tang and depth of sourdough. These are a family-favorite treat that transforms your sourdough discard into something absolutely delicious.
The sourdough adds such an interesting complexity to these brownies. You get that classic fudgy texture we all love, but with a subtle tang that makes them so much more interesting than regular brownies. Plus, it's a great way to use up sourdough discard instead of throwing it away!
These brownies are perfectly sweet without being overwhelming, and the dark chocolate chips add little pockets of intense chocolate flavor throughout.

Sourdough Brownies

Ingredients
- 1 cup sourdough starter (100% hydration, discard or active)
- 3/4 cup unsweetened cocoa powder
- 1/2 cup coconut flour
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1/2 cup coconut oil (melted)
- 1/2 cup maple syrup or honey
- 1/4 cup unsweetened applesauce (for moisture)
- 2 large eggs (room temperature)
- 2 tsp vanilla extract
- 1/2 cup dark chocolate chips
Instructions
- 1Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper or lightly grease it with coconut oil.
- 2Mix the Dry Ingredients: In a medium bowl, whisk together the cocoa powder, coconut flour, baking soda, and sea salt. Set aside.
- 3Mix the Wet Ingredients: In a large bowl, whisk together the melted coconut oil, maple syrup (or honey), unsweetened applesauce, eggs, and vanilla extract until well combined.
- 4Incorporate the Sourdough Starter: Add the sourdough starter to the wet ingredients and mix until it's smooth and fully incorporated.
- 5Combine Wet and Dry Ingredients: Gradually stir the dry ingredients into the wet mixture, ensuring no lumps remain. The batter will be thick.
- 6Add Chocolate Chips: Fold in the dark chocolate chips.
- 7Bake the Brownies: Pour the batter into the prepared baking pan and spread it evenly with a spatula. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
- 8Cool and Serve: Let the brownies cool in the pan for about 10-15 minutes before transferring them to a wire rack. Once cooled, slice into squares and enjoy!
