Sourdough Apple Coffee Cake with Streusel & Maple Icing

Ingredients
- 1/2 cup sourdough starter discard (unfed)
- 1/4 cup unsweetened applesauce
- 1/4 cup maple syrup (or honey)
- 1/4 cup melted butter or coconut oil
- 1 large egg
- 1/2 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 small apple, peeled, cored, and diced
- For the Crumb Topping:
- 1/4 cup almond flour
- 1/4 cup rolled oats
- 2 tablespoons coconut sugar or maple sugar
- 2 tablespoons cold butter or coconut oil, cut into small cubes
- 1/2 teaspoon ground cinnamon
- 2 tablespoons slivered almonds
- For the Icing Drizzle:
- 2 tablespoons cream cheese, softened
- 1–2 tablespoons maple syrup or honey (to taste)
- 1–2 teaspoons milk of choice (to thin as needed)
Instructions
- 1Preheat & Prep: Preheat oven to 350°F (175°C). Grease a 6-inch round cake pan and line the bottom with parchment.
- 2Mix Wet Ingredients: In a medium bowl, whisk sourdough discard, applesauce, maple syrup, butter, egg, and vanilla until smooth.
- 3Mix Dry Ingredients: In another bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- 4Combine: Stir dry mixture into wet until just combined. Fold in diced apple.
- 5Make the Crumb Topping: Combine almond flour, oats, sugar, and cinnamon. Cut in butter (or coconut oil) with fingers, fork, or pastry cutter until coarse crumbs form.
- 6Assemble & Bake: Pour batter into prepared pan. Sprinkle evenly with crumb topping. Bake 30–35 minutes, or until a toothpick inserted in center comes out clean.
- 7Make the Icing: Whisk cream cheese and maple syrup until smooth. Add milk gradually to thin to a drizzling consistency.
- 8Finish & Serve: Cool cake in the pan for 10 minutes, then transfer to a rack. Drizzle with icing before serving.
